Minty Quinoa Bhel!

Ingredients:

  • Quinoa: 80 gms
  • Chopped Shallots: 20 gms
  • Chopped Coriander: 10 gms
  • Puffed Rice: 30 gms
  • Diced tomatoes: 15 gms
  • Chopped mint: 10 gms
  • Cumin powder: 5 gms
  • Hing: 3 gms
  • Diced Cucumber: 20 gms
  • Lemon juice: 10 ml
  • Tamarind Chutney: 5 ml
  • Honey: 5 ml
  • Olive Oil: 20ml
  • Salt & pepper to taste

Methods:

  • Cook the quinoa in water or vegetable stock.

  • Set a side for it to cool.

  • Gently fold in all the ingredients.

  • Taste and adjust the seasoning.

  • Place on a plate and garnish with mint leaves.
