Masaledar Quinoa & Cauliflower!

Serves: 2 People

Ingredients:

  • Quinoa: 80 gms
  • Cumin Powder: 1tspn
  • Turmeric Powder: 1tspn
  • Green Chillies: 1
  • Curry Leaves: 1 stick
  • Chopped Onions: 40 gms
  • Mustard Seeds: 1tspn
  • Cauliflower florets: 60 gms
  • Oil: 30ml
  • Coriander chopped: 20 gms
  • Fresh grated coconut: 20 gms

Methods:

  • Cook the quinoa in stock or water. Keep aside.

  • Heat the oil in a pan over a medium flame.

  • Saute the Cauliflower florets with half the spices. Keep aside.

  • Add oil, mustard seeds & all the remaining spices in the pan. Sweat the onion in it.

  • Add the quinoa and the cauliflowers into the pan.

  • Taste and adjust seasonings as desired.

  • Garnish with chopped coriander, coconut, and fried curry leaves.
