Quinoa and Yogurt Dip

A tangy recipe for the ones who want to keep healthy but enjoy what they eat too! Quinoa being a part of this recipe, makes it more nutritional & healthy without compromising on the flavour. A simple dish that you can relish at your very home.

Ingredients:

  • Boiled quinoa - 1/2 cup
  • Greek yogurt (plain) - 1 cup
  • Cucumber (peeled deseeded grated and water squeezed out) - 1 medium
  • Tahini paste - 1/2 tsp
  • Salt pepper to taste
  • Chilli flakes (optional)
  • Parsley - 1 tiny bunch chopped
  • Toasted almonds (sliced) - 6 to 8
  • Cherry tomatoes - a few
  • Toasted cumin powder - 1/4 tsp
  • Sweet paprika - 1/4 tsp

Methods:

  • Season the quinoa with salt pepper and chili flakes, add parsley too.

  • Whisk tahini with hot water till it becomes smooth. Then fold it in yogurt, cucumber, salt and toasted cumin powder.

  • Take a deep plate, put quinoa in a mould at the center of the plate and press down gently. Later put the yogurt on the plate.

  • Later, garnish with cherry tomatoes on the yogurt and almonds on top of the quinoa. Top it up with a little more cumin and paprika powder.

  • Finally, remove mould and serve.
