Quinoa Pulihora

A tangy South Indian dish that will fulfil your protein needs and leave you asking for more.

Ingredients:

  • 1/2 cup Quinoa
  • 1 cup Water
  • 3 tablespoon Lemon Juice
  • 2 tablespoon Peanuts
  • 3/4 teaspoon Mustard Seeds
  • 1/2 teaspoon Chana Dal
  • 1/2 teaspoon Urad Dal
  • 10-12 Cashew Nuts
  • 10-15 Curry Leaves
  • 3 fresh Green Chillies
  • 2 tablespoon Oil
  • 1 Dried Red Chilli
  • A pinch of Hing
  • 1/4 teaspoon Turmeric Powder
  • Salt to taste

Methods:

  • Cook the quinoa according to package instructions and cool completely.

  • Heat little oil in a medium pan. Fry mustard seeds, chana dal, urad dal with peanuts until light brown.

  • Throw in some cashews and sauté until golden brown.

  • Add the green and red chillies with curry leaves and fry for a minute.

  • Mix in turmeric powder and hing.

  • Toss in the cooked quinoa and salt and mix.

  • Take the pan off the heat and add the lemon juice to it.

  • Serve hot.
