A tangy South Indian dish that will fulfil your protein needs and leave you asking for more.
Cook the quinoa according to package instructions and cool completely.
Heat little oil in a medium pan. Fry mustard seeds, chana dal, urad dal with peanuts until light brown.
Throw in some cashews and sauté until golden brown.
Add the green and red chillies with curry leaves and fry for a minute.
Mix in turmeric powder and hing.
Toss in the cooked quinoa and salt and mix.
Take the pan off the heat and add the lemon juice to it.
Serve hot.
