Poha is a signature dish originating from Maharashtra and when made with quinoa it becomes much more nutritious. Commonly had as breakfast because of it being light, delicious and easy to make, this is a super-food made with the help of a super-grain that goes by the name of quinoa.
Begin by boiling the quinoa with turmeric and salt and keep it aside.
After which you take a pan add some oil. Once it's hot, add mustard seeds, jeera and curry leaves. As it crackles add the onions and sauté it for a while.
Add peanuts and then sauté it, add boiled quinoa, add chopped ginger chopped green chilli.
Then add some lemon juice to the mix.
Season it with salt and garnish it with fresh desiccated coconut, grated beetroot and fresh chopped coriander leaves.
Finish it by adding finely chopped tomatoes.
