Cumin Spiked Quinoa with Beetroot & Green Apples

Serves: 2-3 People

A blend of fruits, vegetables and quinoa! Making for a blast of flavours and nutrition, with the added benefits of quinoa helps you enjoy having healthy food as compared to having a dull looking & tasting dish. Take care of your health without compromising on flavour!


  • Quinoa – 80g
  • Chopped Onions – 20g
  • Cumin powder – 4g
  • Lemon juice – 1 tspn
  • Beetroot Cooked – 2 (100 grams)
  • Vinegar – 10ml
  • Honey – 10g
  • Green Apple – 10p
  • Chopped Parsley – 5g
  • Olive Oil – 20ml (10 ml)
  • Cress to garnish


  • Begin by dicing & blending one beetroot in a mixer with red wine vinegar, honey and a touch of water. Store separately in the fridge.

  • Then, cook quinoa in veg stock or water with a little lemon zest for around 10 - 15 mins.

  • Later, fold in the quinoa with cumin, salt, pepper, onions & lemon juice. Add chopped parsley & set aside.

  • Finally, fold in the beetroot sauce with diced beetroot, onions, apples and chill.


Spoon the quinoa in the middle of the plate inside a ring & top it of with the beetroot mix. Top it off with cress & a little drizzle of olive oil.
