Continental Quinoa Delight

Serves: 2 People

A satisfying and healthy Quinoa dish packed with flavours and different ingredients served along with Paneer Skewers.

Ingredients:

  • For Cottage cheese skewers - Cottage cheese - 200 gms
  • Red, Green and Yellow peppers - 1/4th cubes
  • Garlic paste - 1 tsp
  • Olive oil - 1 tsp
  • Cajun seasoning -1 tsp
  • Honey - 1 tsp
  • Mustard - 1 tsp
  • Salt & pepper - To taste
  • For the Herb Parsley Quinoa - Quinoa - 1 cup
  • Garlic - 1 tsp
  • Stock - 2 cups (For boiling the quinoa)
  • Parsley (Chopped) - 1 tbsp
  • Olive oil - 1 tbsp
  • Mix herbs - 1 tsp
  • Salt & Pepper - To taste
  • For Red pepper Coulis - Red pepper (Roasted & Pureed) - 1
  • Cayenne pepper - 1/2 tsp
  • Sugar - A pinch
  • Garlic - 1 tsp
  • Tomato paste - 1 tbsp
  • Vegetable Stock - 4-5 tbsp
  • Salt & Pepper - To taste
  • Cream - 1 tsp (If required)

Methods:

  • For Cottage cheese skewers - Marinate the above ingredients together for 10-15 minutes.

  • Put peppers and cottage cheese cubes alternately on sticks to make skewers.

  • Pan fry the skewers.

  • For the Herb Parsley Quinoa - In a pan, add olive oil and garlic. Sauté for a minute.

  • Add the boiled quinoa, salt & pepper, mixed herbs, peppers and parsley.

  • Sauté for a minute and serve hot.

  • For Red pepper Coulis - In a pan, add oil and sauté the garlic for a minute. Add the red pepper puree.

  • Add the tomato paste, stock and season well with salt, sugar, and pepper.

  • Lastly, add the cream. Keep it aside. Season with herbs and seasoning. Drizzle with basil oil for garnishing.

  • For Plating - Take a fancy plate, put a ring mold on it.

  • Fill your quinoa mixture into the ring mold.

  • De-mold the quinoa.

  • Place the cottage cheese skewers on the bed of herbed parsley quinoa.

  • In a shot glass, serve the red pepper coulis.

  • Garnish the plate with colourful edible flowers.
