A satisfying and healthy Quinoa dish packed with flavours and different ingredients served along with Paneer Skewers.
For Cottage cheese skewers - Marinate the above ingredients together for 10-15 minutes.
Put peppers and cottage cheese cubes alternately on sticks to make skewers.
Pan fry the skewers.
For the Herb Parsley Quinoa - In a pan, add olive oil and garlic. Sauté for a minute.
Add the boiled quinoa, salt & pepper, mixed herbs, peppers and parsley.
Sauté for a minute and serve hot.
For Red pepper Coulis - In a pan, add oil and sauté the garlic for a minute. Add the red pepper puree.
Add the tomato paste, stock and season well with salt, sugar, and pepper.
Lastly, add the cream. Keep it aside. Season with herbs and seasoning. Drizzle with basil oil for garnishing.
For Plating - Take a fancy plate, put a ring mold on it.
Fill your quinoa mixture into the ring mold.
De-mold the quinoa.
Place the cottage cheese skewers on the bed of herbed parsley quinoa.
In a shot glass, serve the red pepper coulis.
Garnish the plate with colourful edible flowers.
