Cook the quinoa in stock for 10 minutes. Set aside and keep warm
Fold the quinoa in with the other ingredients except for hummus. Check Seasoning. Serve with hummus.
When serving, spread the hummus on a plate and spoon the quinoa mix over it. Sprinkle with paprika powder and drizzle olive oil to enjoy this dish!
