Vegetable Quinoa Soup

Warm your soul on a rainy day with this healthy vegetable quinoa soup.


  • 1 med Onion (julienne)
  • 100 gms Cauliflower florets (par-boiled)
  • 100 gms Broccoli (par-boiled)
  • ½ cup Quinoa 200 gms
  • Cabbage (shredded) 50 gms
  • Green peas
  • 2 tsps ginger
  • ¼ tsp dry ginger powder
  • ½ tsp dry garlic powder
  • 1 tsp white pepper powder
  • 1 tbsp Vinegar
  • ½ tsp Dark Soy sauce
  • 1 tbsp Olive oil
  • 4 cups water
  • Salt per taste


  • Add the olive oil to a saucepan and bring it to heat. Add the onions and sauté them till they turn pink.

  • Add half the amount of ginger and cook till it leaves its aroma (about a minute).

  • Now add the cabbage, carrots, and beans and cook them for about a minute.

  • In the meantime, dry roast the quinoa till the grains pop. Add the quinoa to the vegetables along with garlic and ginger powder.

  • Mix 3 cups of water to the saucepan and cook it while it is covered for 10 minutes. Add the cauliflower, green peas, and broccoli and cook for another 5 minutes.

  • Add the rest of the water at this stage as required for consistency.

  • Add the white pepper powder, vinegar, salt, and soy sauce and bring to a boil on simmer.

  • Garnish with ginger julienne.
