Mediterranean Pomegranate Quinoa Salad with Mango Salsa & Olives

Experience a burst of flavours that blend into a tasty yet nutritional bowl of salad. Mediterranean Pomegranate Quinoa Salad with Mango Salsa & Olives has multiple ingredients including quinoa that help in managing your weight, so indulge guilt-free and compromise on neither flavour or nutrition!


  • Pomegranate Juice 300ml
  • Red wine Vinegar 20ml
  • Cornflour -30g
  • Pomegranate seeds – 20g
  • Crushed Peanuts -10g
  • Diced Mango 40g
  • Chopped Red Thai Chilli – 1
  • Picked Basil leaves – 20g
  • Quinoa – 80g
  • Mint leaves – 5g
  • Lemon Juice – 1 tspn
  • Aragula Leaves – 40gms
  • Chopped black olives – 20g


  • Start by cooking the quinoa in stock or water for around 10-15 minutes. Dry and then fold with julienned basil leaves & lemon juice. Season & let it cool.

  • Then, you reduce the pomegranate juice by almost half. Add cornflour in cold water and whisk it.

  • Whisk together the reduced pomegranate juice with vinegar and olive oil. Check seasoning and again chill.

  • Finally mix together all the other ingredients and fold in the chilled quinoa. Drizzle on top the pomegranate dressing.


Garnish with fresh basil leaves.
