Tri-Colour Quinoa Bake

A dish that tastes as good as it looks. A lot of flavours and ingredients put together to form this 'Tri-Colour Quinoa Bake' that is both nutritional & delicious. Not only quinoa but all the other ingredients too, when put together make for a quinoa-licious meal. With quinoa indulge guilt-free and don't compromise on neither flavour nor nutrition.


  • Quinoa- boiled- 400 gms
  • Pineapple chopped- 100-120 gms
  • Boiled Broccoli purée ( with very little water same which was used to boil the broccoli)- 200 gms
  • Boiled Carrot purée- 200 gms
  • Mozzarella - 100 gms
  • Cheddar- 100 gms

  • Begin by mixing the chopped pineapple into the quinoa with some salt and a little bit of pepper (optional).

  • Then, grease a baking dish lightly with butter and layer with half the quinoa and pineapple mixture.

  • After which you mix 1/3 of the cheese into the carrot and broccoli purée each. Then proceed to reserve the rest.

  • Spoon the broccoli mixture on top of the quinoa mixture, then again the remaining quinoa as a layer on it. On top of which you put the carrot mixture and finally add cheese as a cherry on top.

  • Bake it in a hot oven at about 200 degrees celsius for around 15-20 minutes till it is properly heated and the cheese gets a nice colour on top.
