Quinoa Tawa Pulav

Serves: 2 People

Ingredients:

  • 1.5 cups boiled Quinoa
  • 1/2 capsicum, chopped
  • 1 carrot, sliced thin
  • 1 potato, chopped
  • ½ cup green peas, blanched
  • 2 large tomatoes chopped
  • 1 medium onion, sliced
  • 1 tsp ginger garlic paste
  • ½ tsp jeera
  • ¼ tsp red chili powder
  • ¼ tsp turmeric powder
  • 2 tsp pav bhaji masala or add as required
  • 2 tbsp oil
  • ½ teaspoon lemon juice
  • Coriander leaves for garnish
  • Salt to taste

Methods:

  • Steam/boil all your vegetables till just done. Don’t over cook them.

  • In a pan, heat oil and add jeera to it. Once brown add onions and saute.

  • Add tomatoes along with ginger garlic paste and fry till done.

  • Add dry spices along with steamed veggies and sauté for 4-5 minutes.

  • Add boiled Quinoa and gently mix everything together.

  • Serve garnished with coriander leaves, lemon wedges, and some raita.
