Quinoa Paneer Salad

Serves: 2 People

Ingredients:

  • Quinoa - 1 cup (Cooked)
  • Cherry tomato - 10-12 (halved)
  • Paneer - 250 g
  • Tandoori Masala - 1.5 tsp
  • Red bell peppers - ½ cup (Thinly sliced)
  • Lettuce - 1 cup
  • For the dressing: Extra virgin olive oil - 2 tbsp
  • Lemon juice - 2 tsp
  • Balsamic vinegar - 1 tsp
  • Salt to taste
  • Freshly ground black pepper - ¼ tsp

Methods:

  • Cut paneer into thin and long pieces.

  • Heat a grill pan and gently brush it with oil.

  • Lightly Coat paneer with tandoori masala.

  • Grill paneer from both the sides until slightly browned.

  • Add Quinoa, cherry tomato, grilled paneer, red bell peppers and lettuce in a bowl and mix.

  • Mix all the ingredients for the dressing in a bowl.

  • Pour the dressing over the salad and toss gently.
