Quinoa Koftas/Croquettes

Adding Quinoa to your favorite dishes is always a good idea for healthier lifestyle. Try Quinoa Koftas because once you try them, there is no stopping you!


  • 1/2 cup cooked quinoa
  • 1/2 cup grated paneer
  • 1 cup grated bottle gourd
  • 1/2 tsp salt
  • 1 tsp ginger grated
  • 1 tsp green chilli finely chopped
  • 1/4 cup coriander leaves finely chopped
  • 2 teaspoons coriander powder
  • 2 tablespoons rice flour
  • 3 teaspoons oil, divided

  • Begin by kneading and mashing the paneer and cooked quinoa together in a large bowl,

  • After which you have to squeeze out all the water from the grated bottle gourd and add it to the bowl, along with all the other ingredients, including 2 teaspoons oil. Keep aside 1 teaspoon of oil.

  • Then simply divide them into 10 portions and roll between palms into smooth balls / koftas.

  • Preheat air-fryer or oven at 190 celsius (4-5 mins).

  • While that's happening, brush the koftas with the remaining 1 teaspoon of oil.

  • In the preheated air-fryer /oven, place the koftas and set timer to 12 minutes. The koftas are ready when it is golden brown and crisp on the outside. They may take slightly longer in the oven.

  • Serve hot with a coriander chutney as a snack or add it to a gravy/curry base to make it a kofta curry, that goes well with plain Quinoa pulao, plain rice & rotis!
