Quinoa Arancini

Delicious, crispy, deep-fried balls of Quinoa with a mozzarella cheese filling and crunchy breadcrumb coating.

Ingredients:

  • 2 cups Quinoa
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp olive oil
  • 1 tbsp garam masala
  • 2 tbsp dried basil
  • 1 tbsp garlic powder
  • 1 cup breadcrumbs
  • 1 cup mozzarella cheese, cut into small bites
  • ½ cup paneer
  • Mango pickle
  • Mint Mayonnaise

Methods:

  • Cook the quinoa with vegetable stock according to instructions on the package and keep aside to cool.

  • In a large bowl, mix the quinoa with paneer, all the spices and olive oil.

  • Form small balls with the quinoa and insert a small piece of mozzarella inside each ball.

  • Dust corn flour on all arancini balls.

  • Coat it in breadcrumbs.

  • Deep fry the balls in hot oil.

  • Serve with mango pickle and mint mayonnaise.
