Delicious, crispy, deep-fried balls of Quinoa with a mozzarella cheese filling and crunchy breadcrumb coating.
Cook the quinoa with vegetable stock according to instructions on the package and keep aside to cool.
In a large bowl, mix the quinoa with paneer, all the spices and olive oil.
Form small balls with the quinoa and insert a small piece of mozzarella inside each ball.
Dust corn flour on all arancini balls.
Coat it in breadcrumbs.
Deep fry the balls in hot oil.
Serve with mango pickle and mint mayonnaise.
